Why 500 miles?

Hi folks, long time rider, first time riding darkside. Have a 04 VTX 1800 R1 and just bought a General Altimax RT43 205 65 16 95H for my first. I keep reading about a 500 mile thing but no clue what is supposed to happen, or not happen. That and the SNAP effect. Someone explain please?
